our oysters are influenced by the adjacent Atlantic Ocean which provides brackish water through tidal flows and sea-level rise. Our oysters are balanced by the extremes of fully ocean-raised, and freshwater influenced oysters.

Our Flavour
Softer than ocean oysters, brackish oysters carry a gentle, moderate salinity rather than a sharp brine. Balanced and approachable, the saltiness is present but doesn't overwhelm making them ideal for first-timers while still complex enough for connoisseurs.
